Rabbit with Mustard Sauce - Recipe

  • 12 Rabbit Joints
  • 2 TBSP's Flour
  • Bacon Fat or Dripping
  • 2 large onions sliced
  • 2 oz streaky bacon
  • 1 pint stock
  • Salt and Pepper
  • 1 heaped TBSP Dijon or French Mustard
  • Small Tin Evaporated milk
  • Chopped parsley
  • Croutons


Soak rabbit joints in water with sale and vinegar overnight. Drain and dust with a little flour - melt the bacon fat and fry with onions until brown. Stir in flour - add stock and seasonings etc... bring to boil. Cook in oven for 1 1/2 hours - if too much sauce reduce. Sprinkle with sauce and croutons before serving.
