Paddle Crab Cooking

A couple of tips for cooking paddle crabs.

First tip - Don't throw them back when you catch them (often people catch them when they are drag netting for flounder) - mostly they are thrown back!

Second tip - keep the bigger ones only,

Third Tip - if you just want the meat.. remove the top shell - split the crab in half (vertically) - - remove the gills - roll the meat out with a heavy rolling pin...

Fourth Tip -  again split in half (leave the shell on this time) - remove gills - place on plate... drizzling with a cream based sauce (i.e. reduce cream with garlic and fish stock) - or for Pacific Fair - do the same - but replace the cream with coconut cream - YUM!
