Green Tomato Relish

  • 3 KG green tomatoes cut into large chunks
  • Slice 500 gs onions finely and put both in bowl - sprinkle with 1 tablespoon salt - and leave overnight.
  • Drain off liquid and put in big pot with 2 finely chopped green peppers, 4 cups brown vinegar, 3 cups sugar, 1 level tablespoon curry (Vencat if possible). Cover pot and simmer for 2 1/2 hours.
  • Blend 2 level tbs dry mustard - 1 cup more vinegar - stir until boiling - and thick - simmer for 20 more minutes.
