Cauliflower + Coconut Curry - Recipe

  • 1 Cauli
  • 2 med tomatoes
  • 1 onion
  • 1 garlic
  • 1 fresh green chili - chopped and seeded
  • 1/2 tsp turmeric
  • 2 tbsp oil
  • 14 fluid OZ Coconut milk
  • 1 cup water
  • 1 TSP sugar
  • (1 TSP Tamarind pulp - soaked in 3 TBSP warm water)


Salt to taste. Food processor - onions, garlic, chili turmeric to a paste.

Heat oil in Wok or fry pan - fry spice paste without browning.

Add cauliflower florets and toss well - stir in coconut milk - water - - salt simmer 5 minutes - strain Tamarind - and reserve juice - and add it with tomato to pan 2-3 mins - thicken and season.
