Serves 4: 3 beetroots (1 1/2 lb), 1/2 pint prepared white sauce, 1 spring onion or 1 teaspoon finel chopped onion to garnish Preparation Time: 9 minutes
Cut off stalks from the beetroot about 1 in. above the root. Wash carefully without damaging the skin. Wrap in a greaspoon paper. Place in baking tin in a moderate oven (350 deg F), cook until tender - approx 2 hours. When cooked allow to cool slightly. Peel away skin and cut into cubes. Coat with white sauce and garnish with chopped onion. Serve with bacon dishes.
